Artichokes

When you first approach this green bulb , it hardly seems edible. Artichokes may seem challenging but is becomes easier with each preparation. First trim the top of the artichoke, next trim the stem about an inch ,then using a scissors trim the tips of the outer petals then rub the top of the artichoke with lemon to prevent browning. Place artichoke in pot of boiling water. It should be ready when petals are soft.

You can boil the bottoms , and chop the leaves and stems and  sauté them in a saucepan. It is best to prepare the leaves as soon as you buy them in order to retain the nutritional value and flavor. Yum!

Ginger is available year round.This fibrous root  comes in hand shaped chunks . Look for ginger in large chunks. Small chunks tend to dry out faster. The best way to store ginger is just putting it in the vegetable crisper in your fridge. It can be used in soups, stews and Thai cooking. Ginger tea is also great for curing stomach aches.

Cactus pear also known as prickly pear because it resembles an actual cactus plant. It is filled  with edible  seeds. Cactus pear has similar tastes of a melon. You must cut it in half and scoop out the pulp with a spoon. The pulp can be used in drinks and sauces or topping on ice cream . You can also eat it by slicing and eating the pulp.

Choose Plantians Peel off skin and cut into slices . heat oil in skillet and add plantains, brown on both sides and place on paper towel to absorb oil.
